Desiccated Coconut

Desiccated coconut is the dried white meat of coconut processed under stringent food processing guidelines and is widely used in the food industry for its unique taste and excellent blending properties with other food ingredients. Desiccated coconut can also be toasted to customer specifications as to color and shade, and may be sweetened or unsweetened.

Granulated Cuts:

  • Coarse: Used for specialty confectionery
  • Medium: Used in fillings for candy bars, toppings for cakes and pastries, and ingredients for institutional foods, cereals, and cookies.
  • Macaroon: A fine granular cut used for macaroon candies, cakes and cookies, toppings and home cooked recipes.
  • Extra Fine: Very Fine grains of desiccated coconut used for cakes, pastries, cookies and biscuits.

Fancy Cuts:

  • Flake: (1/2 – 1 inch lengths) Used for bakery toppings , decorations and confectionery centers. It is also the most popular cut for sweetening.
  • Chips: (Thick Chips ¼ -1/2 inch widths and ½ - 1 ½ inch lengths) Used for specialty confectionery, snack packs and trail mixes.
  • Fancy Shred: (Threads of about ½ - 1 inch lengths) Used for bakery toppings and decorations.
