

I’m obsessed with dark rice (red and black). It's filling and rich in antioxidants, and has way more flavor than traditional brown rice. A chef friend of mine introduced us to this spin on rice, and we can’t stop (won’t stop) eating it. I’ve found that the coconut milk, rich in good-for-you fat, helps me feel full and fueled for the next workout.
Ingredients*
Black or red rice
1 can coconut milk
Peanuts
Pineapple
Bell peppers
Sesame oil
*Aside from the rice and coconut oil, these ingredients are totally optional. When we cook we tend to wing it and toss in things we like. This is our favorite iteration. (Add chicken or tofu for a boost of protein.)
Directions
Combine 1 can of coconut milk, 1 can of water, and 1 can of rice into pot. Bring to a boil and then heat on low until rice is cooked, about 35 to 45 minutes (depending on the type of rice). Once the rice is cooked, combine rice, peanuts, peppers, pineapple, and sesame oil in pan and sauté all ingredients until incorporated and warmed.
