It’s no secret that I am a fan of coconut oil. Not only is it full of the best kinds of saturated fat and metabolism-boosting medium chain triglycerides (MCTs), but it holds up well under the heat of cooking. It’s a versatile, ancient oil that goes well in everything from smoothies to homemade french fries.
Skinny Coconut Oil comes from palm trees located in a Vietnam province called Ben Tre, which has been nicknamed "Bamboo Landing". Ben Tre is a province of Vietnam located in the southern Mekong Delta. Coconut grows on palm trees that were recently awarded the “Tree of Life” by the Asia-Pacific Coconut Community which recognized the pristine environment and superior quality of Ben Tre coconuts.
What I love about this sweet jelly is that it’s easy to make and looks impressive: the coconut milk separates and sets to form two layers, the top is white and the bottom is translucent. The agar agar sets the jelly without refrigeration and does not melt in hot weather making it perfect for summer.
Copra meal is a byproduct of the production of coconut oil. Once pressed or extracted from coconut oil or coconut skin, the remaining residue is called copra.
